KOMPAS.com - Virgin coconut oil atau VCO adalah minyak kelapa murni yang dipisahkan dari santan kelapa tanpa merusak kandungan antioksidannya.

VCO memiliki banyak manfaat di antaranya untuk kesehatan dan kecantikan.

Minyak kelapa yang murni memiliki khasiat tinggi. Ciri minyak kelapa murni adalah bening, aroma wangi kelapa, dan dapat disimpan dalam waktu yang relatif lama tanpa mengalami oksidasi.

Teknik pemisahan VCO

Teknik pemisahan VCO dapat dilakukan, sebagai berikut:

VCO dapat dipisahkan dengan teknik pemisahan campuran sederhana. Dengan memanfaatkan perbedaan massa jenis antara air, galendo dan minyak. Selain itu pada pemisahan ini juga digunakan teknik filtrasi atau penyaringan.

Teknik memecah ikatan antara galendo dan minyak pada VCO dilakukan agar galendo dan minyak mengalami redeposisi ke zona sesuai massa jenisnya. Sehingga proses pemisahan mudah dilakukan.

Terdapat dua cara untuk memisahkan VCO yang bisa merusak kandungan anti oksidan pada minyak kelapa dan cara yang dapat menjaga khasiat minyak kelapa. Berikut penjelasannya:

Cara berisiko merusak kandungan anti oksidan minyak

Ada beberapa cara yang banyak dilakukan masyarakat dalam memisahkan VCO, namun cara ini berisiko merusak kandungan antioksidannya. Di antara cara tersebut adalah :

Memisahkan minyak kelapa dengan cara dipanaskan. Cara ini akan menghasilkan minyak kelapa yang berwarna kuning emas. Minyak yang dihasilkan dengan teknik pemanasan memiliki aroma wangi untuk beberapa hari, namun akan berbau menyengat setelah beberapa hari kemudian. Bau menyengkat ini adalah tanda bahwa minyak miskin anti oksidan karena telah rusak oleh suhu yang tinggi.
Teknik fermentasi, pemisahan VCO dengan teknik fermentasi juga berpotensi menurunkan kualitas minyak karena telah bersentuhan dengan mikroorganisme atau zat asing.
Dijemur di bawah sinar matahari yang terik. Penjemuran ini juga bertujuan untuk memanaskan, sehingga akan mengakibatkan kenaikan suhu.

Cara tanpa merusak khasiat minyak kelapa

Langkah kerja pembuatan VCO tanpa merusak khasiatnya, yaitu:

Pilih 5 kelapa yang sudah tua, namun hindari kelapa yang sudah mulai tumbuh. Kupas sabut kelapa dan belah kelapa menjadi 2 bagian dan kukur atau parut.
Peras kelapa yang sudah diparut, tambahkan sedikit air biasa. Saring dan pisahkan santan kental dari ampas kelapa.
Masukkan santan kelapa ke dalam sebuah plastik kaca, isi setengah nya. Dan ikat kuat
Guncang plastik yang berisi santan kelapa menggunakan tangan selama 20-30 menit dengan kecepatan sedang hingga tinggi
Setelah diguncang, gantung plastik itu menggunakan statif dan biarkan hingga 24 jam.
Setelah 24 jam santan kelapa akan perpisah menjadi 3 bagian , yaitu air, VCO dan galendo
Buang air dengan cara menusuk plastik bagian bawah, biarkan air keluar perlahan hingga habis dan hanya menyisakan galendo dan VCO
Masukkan ke dalam wadah kaca bening, dan ambil VCO yang terpisah sedikit demi sedikit menggunakan sendok dan lakukan filtrasi menggunakan kertas saring atau kertas tisu.
Filtrat yang di hasilkan adalah minyak kelapa murni atau vco, sedangkan residunya adalah galendo. Simpan VCO yang berhasil dipisahkan ke dalam botol.
